Being the cicerone of a gastronomy as rich, broad and diverse as Peruvian cuisine, which is also experiencing an unprecedented boom on the international scene, is not easy. But Quispe, with six years of life, has managed to position itself as a true reference in the culinary scene of the Spanish capital.
Open since 2021 and belonging to the Quispe Group, this restaurant serves as an ambassador of Nikkei cuisine in the capital; Ponja offers diners an immersive experience in Peruvian culture through a Nikkei table and its perfect mix of hot and cold cuisine. The menu is a perfect fusion between Japanese technique and the colors and flavors of Peru; in the dishes, very polished, detailed and 100% homemade, the Japanese mastery and meticulousness and the power of the most genuine Peruvian cuisine are evident.
Quispe was the first, and as a group he later added Ponja Nikkei and Sillao, both restaurants also located in Madrid. César had already traveled in Asia, knew Spain well, lived in Barcelona and came to the capital to study an MBA. It was with his partner and business partner, the Argentine Constanza Rey, an architect specializing in restaurant interior design, with whom he took this first project, which in the spring of 2023 will move from Calle Orellana to the heart of the Salamanca district, to the very end. Moving from a more foodie environment to this new location of supposedly higher standing means prosperity?
What is so special about it? Nikkei cuisine, that which fuses Japanese technique with Peruvian flavors and ingredients, has become one of the most acclaimed in recent years. And, in 2025, it has a new place of reference. The latest opening of the Quispe group has the largest variety of Nikkei nigiris in our country, as well as a delicious selection of ceviches, tiraditos, fish, seafood and grilled meats. The restaurant, located at the foot of the Bernabéu, focuses on the bar and the liquid offer, with a wide and varied menu of pisco-based cocktails.
